The story
Anthony Falcon grew up in Brooklyn loving parrillas, the Argentine style grills he found around New York. His uncle Sergio, from Uruguay, encouraged him to cook that way himself.
Gaucho opened in 2013 in a tiny, cramped storefront at 1601 Penn Avenue in the Strip. People stood shoulder to shoulder or ate in their cars, and the woodsmoke and the lines on Penn Avenue became part of the neighborhood. In May 2015 Falcon expanded next door, and in 2020 he moved Gaucho Downtown.
The steaks still cook over western Pennsylvania hardwoods like cherry, oak, hickory and osage, and they still come with plenty of house chimichurri.
